Seafood: Scotch Trout Fried In Oatmeal
This is a favorable breakfast dish in Scotland.
Wash and dry a cleaned trout, allowing 1 per person. Dip each milk and dredge on both sides with oatmeal. Season with salt and pepper. Fry quickly in heated lard or other fat until golden on both sides and the flesh is fork tender. Serve at once, garnished with a cube of butter and lemon wedge.
