Recipe: Healthy Shredded Chicken Salad

 

INGREDIENTS

  • 3 cups salad greens
  • 2 scallions
  • 1 cup shredded chicken
  • 1 cucumber
  • 1 tbsp chopped basil
  • 1 cup tomatoes, chopped
  • 1 cup roasted veg – peppers and cauliflower

 

DRESSING

  • 1/3 cup cashews, soaked in water
  • 1/4 cup water
  • 1 tbsp pickled jalapenos
  • 1 tbsp chopped basil
  • 3 grape tomatoes
  • 1 garlic clove
  • Salt and pepper

INSTRUCTIONS

  1. For the cashew sauce, you will need soaked cashews. If you haven’t soaked them for at least 3 hours you can still make the sauce by soaking them in hot water for about 15 minutes. Then drain the water and add all ingredients for the dressing into a blender or a nut grinder and blend until smooth. Add salt and pepper to taste and you’re done!
  2. Cut the cucumbers, greens, basil, tomatoes, and scallions. If you don’t have any – boil some chicken and shred it.
  3. Now add all ingredients to a bowl, toss and adjust for salt and pepper. Enjoy
