Grain foods: Arroz A Portuguesa

An interesting rice dish from Portugal that could be served as an accompaniment to seafood or poultry.

1 large onion, finely chopped.

1 garlic clove, crushed.

3 tablespoons olive or vegetable oil.

Half cup diced smoked pork or ham.

2 large tomatoes, peeled and chopped.

2 and a half cups water or broth.

1 cup shelled fresh green peas or other green vegetables.

Salt, and pepper to taste.

Saute the onion and garlic in the oil in a large saucepan until the onion is tender. Add the pork or ham and saute for 1 minute. Stir in the tomatoes and cook slowly for about 5 minutes. Add the water and bring it to a boil. Stir in the rice and peas and lower the heat. Season with salt and pepper. Cook slowly, covered, for about 20 minutes, or until the rice grains are tender and most of the liquid has been absorbed.
